Instructions
1) If you are using dry chickpeas, soak them overnight. Rinse and cook for about an hour or according to the package instructions. If you are using canned chickpeas, rinse them.
2) Rinse the quinoa and cook according to the package instructions.
3) In a small bowl, add olive oil, balsamic vinegar, dijon mustard, salt and pepper then whisk.
4) In a bowl, add the chickpeas, quinoa, sliced avocado, cherry tomatoes, chopped onion and olives. Toss gently with the dressing.
