Ingredients

  • 2 cups of whole-wheat pasta
  • 1 cucumber
  • 1 avocado
  • tomatoes
  • 1 cup of feta cheese
  • 1/2 cup of pumpkin grains
  • For the seasoning
  • 2 tbsp of olive oil
  • 1 tsp of dijon mustard
  • 2 tbsp of balsamic vinegar
  • salt and pepper

Instructions

1) Cook the pasta according to the package instructions.

2) In a pan, roast the pumpkin seeds.

3) Wash, peal and chop the cucumber, tomatoes and avocado.

4) In a small bowl, add olive oil, dijon mustard, balsamic vinegar, salt and pepper then whisk. Adjust the seasoning to taste.

5) In a bowl, add the cooked pasta, chopped vegetables, feta cheese, and pumpkin seeds. Gently toss with the dressing.
