Instructions
1) If you are using dry chickpeas, soak them overnight. Rinse and cook for about an hour or according to the package instructions.
2) Rinse and cook the quinoa according to the package instructions.
3) Wash, peal and slice the peaches.
4) In a small bowl, add the yogurt, minced garlic and mint, salt and pepper then whisk. Adjust the seasoning to taste.
