1) Soak the red lentils for 15 minutes then rinse.
2) Chop the pepper belles and zucchinis.
3) In a pan, add pepper belles and zucchinis. Drizzle with olive oil. Roast in the oven for 30 to 40 minutes.
4) In a blender, add the rinsed red lentils, rolled oats and water then mix.
5) Preheat a nonstick skillet. Pour the batter in the center of the skillet, slightly tilting until the batter is evenly spread.
6) Cook until the top is set and the bottom is golden brown. Flip and cook on the second side until cooked through.
7) in a blender, mix the parsley with a little bit of water until obtaining a green smooth liquid.
8) In a small bowl, add tahina, lime juice, salt and pepper and whisk. Add the parsley ‘juice’ and mix until obtaining a creamy texture.
9) To serve, garnish the wrap with roasted vegetables, cherry tomatoes, chopped cabbage and olives. Drizzle with the tahina seasoning. Fold or roll the wrap and enjoy.
Recipe Tips
Rolled oats add thickness to the dough. If you prefer a lighter consistency, you can use lentils only.
