  • 2 potatoes

  • 3 tbsp of olive oil
  • 1 bay leaf
  • Salt and pepper

Instructions

1) Rinse and drain the lentils.

2) To a large pot, add chopped onion and olive oil. Saute for 5 min or until softened.

3) Add the lentils along with chopped potatoes, carrots, spinach.

4) Add the bay leaf and season with salt and pepper.

5) Add 4 cups of water or adjust water volume until the vegetables are covered.

6) Cover and bring to a simmer. Cook for 25 minutes or until the vegetables are tender.

7) Blend and adjust the seasoning if desired.
