This potato leek soup is vegan and gluten free. To make this healthy leek soup you need simple ingredients:

  • 4 large leeks
  • 2 potatoes
  • 3 tbsp of olive oil
  • 1 onion
  • 1 bay leaf
  • Salt and pepper

1) To a large pot, add chopped onion and olive oil. Saute for 5 minutes.

2) Add chopped leeks along with potatoes and bay leaf.

3) Add 4 cups of water or adjust the water volume until all ingredients are covered.

4) Cover and cook for 20 minutes or until the vegetables are tender.

5) Remove the bay leaf from the stew and blend. If the soup is too thick, you can add a little bit of hot water and adjust the seasoning.

6) Portion in bowls and serve with a slice of bread.
